Christmas Colors Cuisine: Alkalizing Red Bell Pepper Strips with chili puree


Looking for a Vitamin C Foods to add to your Vegan Meal? Why, not? Remember, Iron is more easily absorbed with Vitamin C . Look at the mighty C in Red Bells! Red Bell Peppers are very high in Vitamin C.

This vegan recipe is fast and easy.

1. Top your Vegan Pizza or your protein based sandwich with this Vitamin C boost.
2. You may prepare this side dish for a single dinner.
3. Or, your refrigerator will be stocked with an amazing sandwich or veggie burger/dog condiment.


Red Bell Pepper Strips

First, choose your favorite complementing pepper. Go sweet with a small flare (Anaheim Chili) Or, tease your palate with a hotter pepper. You may want to experiment to find your pepper of choice. Most peppers complement the Red Bell Pepper Strips in this dish.

Second, gather ingredients.


2 tablespoons minced Anaheim chile pepper , or other mild to medium-hot chile pepper
2 tablespoons apple cider vinegar
2 tablespoons raw agave syrup
1 tablespoon extra-virgin olive oil
2 red bell peppers (cored and cut lengthwise into thin strips)
Salt and freshly ground pepper

Third, mix, saute and chill.

Mix minced chili pepper of choice with vinegar and agave syrup. Add olive oil and set aside.

In a large skillet over medium-high heat, mix vinaigrette with one tablespoon water. Bring to a boil and add pepper strips. Turn off heat, stir vegetables once or twice until coated, cover, and let stand 3 minutes. Season with salt and pepper to taste, and serve at room temperature or refrigerate and serve chilled
