Weekends are short enough, why should I spend hours in the kitchen cooking for hours rather than doing something fun, spending quality time with my family, or just sitting and blogging?
So, I called up my mother and finally asked her for the recipe I always enjoyed but had never made myself. Now I have to come clean, I am not a great cook! But in my defence, in the last few months, with effort or should I say out of necessity, I learned to cook and bake some of my family's favorites. Nothing to rave about but my husband does reach for seconds and that in itself is a silent statement I hold on too!
The recipe I obtained from my mother requires five ingredients and ten minutes of your time. Not bad, you say, and the best thing is that it is healthy. What you'll need is 2 large eggplants, four garlic cloves, olive oil and white vinegar, salt and curry - and here's how you prepare it:
Get 2 large eggplants peel four sides leaving a bit of the skin, then cut them in round slices, not too thin, not too think. (see image above). On a baking sheet covered with aluminum foil, place them side by side, pour or spray olive oil on top. Season with Salt and Curry over and slide the tray in the 350° pre-heated oven, bake until eggplants are brown and tender. You may flip them half way through.
While it's baking, in a small serving plate pour white vinegar, about 1/2cup. Shop four cloves of garlic and put part of it in the vinegar, add a little bit of extra virgin olive oil. When the eggplants are ready, place a first row in the garlic vinegar, take the garlic you had set aside and top it, place a second layer, top it with more garlic and so on until you've placed all your eggplant slices. Put your plate covered in the refrigerator to cool and absorb the garlic vinegar juice.
Mediterranean diets are in general known to offer the greatest benefits for our overall health. The eggplant recipe is one of many, but an amazingly quick and incredibly healthy one! Don't forget the whole grain pita bread with which you will wrap your eggplant. You can add hummus as a side dish if you'd like - another health bonus.
Eggplants are High in Dietary Fiber, Folate, Potassium, Manganese, Vitamin C, Vitamin K, Thiamin, Niacin, Vitamin B6, Pantothenic Acid, Magnesium, Phosphorus and Copper. Low in saturated fat, sodium and cholesterol. Great choice for optimum health and weight loss.
Vinegar helps in the absorption of several nutrients and a great benefit for the digestive system. Seasoning with vinegar is also known to reduce fatigue, and lowering high blood pressure.
Garlic, we all know and agree that garlic is a must for healthy living, eaten raw, garlic is a powerful antibiotic - need I say more. However a caution about garlic, never store raw garlic in oil at room temperature, this can cause health problems. Also consult your doctor if you take specific prescription medicines. That's how powerful garlic can be!
Olive oil: the only vegetable oil that can be consumed freshly pressed from the fruit. Olive oil protects you from heart disease, and prevents colon cancer.
Curry reduces inflammation of joints and protects against cancer, no surprise to those aware of Ayurvedic diets.
